A Simple French Cake

If you're looking for an easy cake that even your kids can help you with without you feeling like the entire baking experience will turn into a disaster, this is the cake for you. This cake comes together in 10 to 15 minutes and you don't even need a measuring cup. So that's one less thing to worry about fitting into you dishwasher. Truly though, if you're looking for a quick cake that can double duty for a wonderful addition to your brunch or even take center stage at your next family get together, this is the one for you. So let's get baking!

Ingredients

The wonderful thing about this simple bake is that you probably have all of these ingredients in your pantry and fridge already.

  • 1 pot of French yogurt (I use Oui)

  • 3 eggs

  • 1 pot of sugar (all ingredients are measured in the now empty yogurt pot)

  • 1 pot coconut oil

  • zest of one lemon

  • 3 pots of flour

  • 1 tsp vanilla extract

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 pot of water

Instructions

Preheat oven to 350 degrees Fahrenheit. Combine all wet ingredients (yogurt, eggs, oil, water, extract) then add dry ingredients (sugar, flour, baking powder, salt, zest). Once fully combined place into a greased cake tin and bake for 35 to 40 minutes or until golden brown and a pick comes out clean from the center.

French Yogurt Cake Finishes

I like to top this lovely cake with preserves like raspberry or strawberry and some fresh whipped cream. My kids love this cake and I serve it as a special weekend treat for breakfast. But you could also make a double batch and layer this cake with a nice vanilla frosting or fruit preserves to dress it up as a centerpiece of a dinner party.
