French Dinner Series: Provençal Chicken and Potatoes

Welcome to my new series where I put together a complete dinner menu with a little French flair to help you create a memorable meal for you and your family. I also include a complete shopping list so you don't miss a single ingredient! This week’s French-inspired dinner is rustic, comforting, and completely doable on a Tuesday night. Featuring tender Chicken Provençal, buttery green beans, and herbed roasted potatoes, it ends on a sweet and effortless note with berries and vanilla whipped. I’ve even included a wine pairing and links to the tools I use to make the experience just a little more beautiful.

🍷 This Week’s Menu

  • Main: Chicken Provençal

  • Vegetable: Sautéed green beans with lemon

  • Starch: Herbed roasted baby potatoes

  • Dessert: Fresh berries with vanilla whipped cream

  • Wine Pairing: Côtes du Rhône (or a light red blend)

🧑‍🍳 The Recipes

🍗 Chicken Provençal

Serves 4
Ingredients:

  • 2 lbs bone-in or boneless chicken thighs

  • 1 pint cherry tomatoes

  • 1 yellow onion, sliced

  • 4–6 garlic cloves, smashed

  • ½ cup pitted kalamata olives

  • 1 tbsp olive oil

  • 1 tsp dried herbes de Provence (or mix of thyme, rosemary, oregano)

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Place cherry tomatoes, sliced onion, garlic, and olives in a ceramic or glass baking dish.

  3. Season chicken with salt, pepper, and herbes de Provence. Nestle over the vegetables.

  4. Drizzle with olive oil.

  5. Roast uncovered for 35–40 minutes until the chicken is golden and the vegetables are soft and bubbling.

🛒 Tip: Serve directly from a rustic baking dish like this one (Amazon affiliate). I cook so much in this pan that I just stays on my stove.

🥔 Herbed Roasted Baby Potatoes

Ingredients:

  • 1.5–2 lbs baby potatoes, halved

  • 1–2 tbsp olive oil

  • 1 tsp herbes de Provence

  • Salt and pepper to taste

Instructions:

  1. Toss potatoes with olive oil, herbs, salt, and pepper.

  2. Spread on a sheet pan and roast at 400°F for 30–35 minutes, flipping halfway through for even browning.

  3. Serve hot, optionally sprinkled with fresh parsley.

🛒 Sheet pans like these heavy-duty ones give the best crisp edges. I love Nordic Ware and I'm currently switching out all of my sheet pans to this brand.

🥬 Sautéed Green Beans with Lemon

Ingredients:

  • 12 oz fresh green beans

  • 1 tbsp butter

  • 1 tsp olive oil

  • 1 clove garlic, minced

  • 1 tbsp lemon juice

Instructions:

  1. Steam or boil green beans until just tender (about 4–5 minutes).

  2. In a sauté pan, melt butter with olive oil. Add garlic and cook 30 seconds.

  3. Add green beans and sauté 2–3 minutes.

  4. Finish with lemon juice and a pinch of sea salt.

🛒 I use these stainless tongs for quick sautéing and serving. I don't know why but I have at least five different sets of tongs and I think I use at least three of them to make one meal. They're just so versatile and I love this set.

🍓 Fresh Berries with Vanilla Whipped Cream

Ingredients:

  • 1 pint fresh strawberries, blueberries, or raspberries

  • Heavy whipping cream

  • Optional: drizzle of honey or lemon zest

Instructions:

  1. Rinse and dry berries.

  2. Use a hand blender or stand blender to whip heavy cream, add 1 tsp of vanilla extract and whip until stiff peaks form

  3. Spoon whipped cream into desired bowls, top with berries

  4. Drizzle with honey or lemon zest if desired.
